Pulled Pork Breakfast Tacos
Serves 6 Time: 30 minutes Difficulty: Intermediate
Ingredients
- 1 pound wood smoked pulled pork, shredded
- 12 large eggs
- 1 pound hash browns
- 1 pound shredded cheddar cheese
- 12 (5-inch diameter) flour tortillas
- Salt, to taste
- Pork rub, Blackstone Bootleg Burger works best
- Hickory barbecue sauce
- 2-3 tablespoons canola oil, for the griddle
Directions
- Preheat Blackstone griddle to medium heat. Apply thin layer of canola oil to the griddle top.
- Steps 3-5 can be cooked at the same time.
- Add pulled pork to the griddle top, season to taste with Bootleg Burger seasoning. Cook pork for 6-10 minutes or until edges are crispy.
- Crack all 12 eggs directly on the griddle top. Season to taste with salt. Cook to desired doneness.
- Add hash browns to the griddle top, season to taste with salt. Cook until both sides are crispy.
- Once the hash browns are done, add shredded cheddar and stir with spatulas until melted.
- Warm 12 flour tortillas on griddle until soft and lightly toasted.
- Build the quesadillas. Evenly divide the hash browns, eggs, and pulled pork between the 12 tortillas. Serve with hickory barbecue sauce.
